Chilled Caribbean Rice Dish

Hi everybody!!! This is one of my favorite side dish recipes to meal prep and save for the week. ORRR it’s a GREAT thing to take to summer BBQs or parties. I love pairing this with grilled chicken or salmon and it’s so good.It’s a childhood fav, with a littttle healthier spin. Besides all the chopping of the veggies, it’s pretty simple to make. BUT, it does need a bit of time to chill in the refrigerator.

Here’s what you’ll need:

2 cups brown rice

1/4 cup olive oil (I add a little more because i like it realllll moms lol)

2 tablespoons white wine vinegar

1 tablespoon dijon mustard

1/2 teaspoon cumin

2/3 cup peppers diced (yellow, and red, or any color!)

1/2 lemon squeezed

3 cloves crushed garlic

1/3 cup green onions chopped

2/3 can of black beans

Salt to taste 

Optional (sometimes I add, sometimes I dont hahah): 1/2 cup diced tomatoes.  I added a few to this one and I enjoy the taste but my sister doesn’t like them! Up to you!

Here’s what you’ll do:

Cook the rice according to the package. As it’s cooking, chop the peppers up, the green onions, and rinse off the black beans.

Get out a nice big salad bowl, as seen in the pictures. Place the cooked rice, veggies, and start measuring out all the spices and dressing ingredients. Mix all together. Chill for a minimum of 2 hours.

BOOM! You’re done! Simple, but insannneeeely tasty!
